This Easy Pumpkin Pie Mimosa is a festive and delightful cocktail perfect for autumn celebrations. Combining pumpkin spice syrup with chilled brut champagne, it captures the essence of pumpkin pie in a bubbly, refreshing drink. Optional touches like a spiced sugar rim and whipped cream topping make it a cozy and elegant treat for brunch or holiday gatherings.

Ingredients

Drink Base

  • 2 Ounces pumpkin spice syrup (homemade or store bought, fully cooled)
  • 68 Ounces brut champagne, chilled (depending on size of glass)

Rim (Optional)

  • 2 Tsp granulated sugar
  • ½ Tsp pumpkin pie spice or cinnamon

Topping (Optional)

  • Whipped cream for topping

Instructions

  1. Prepare the rim (optional): Combine the granulated sugar and pumpkin pie spice on a plate or in a shallow bowl. Moisten the rim of your champagne flute by dipping it in a small amount of water, then press the rim into the sugar mixture to coat it evenly.
  2. Add pumpkin spice syrup: Pour 2 ounces of pumpkin spice syrup into the prepared champagne flute. Ensure the syrup is fully cooled if homemade to avoid affecting the champagne’s bubbles.
  3. Pour in champagne: Gently add 6 to 8 ounces of chilled brut champagne to the flute, filling it to your preferred level. Stir carefully to mix the syrup and champagne without losing the bubbly texture.
  4. Garnish and serve: Optionally, top with a dollop of whipped cream for added richness and visual appeal. Serve immediately and enjoy the festive flavors of this pumpkin pie-inspired mimosa.

Notes

  • You can use store-bought pumpkin spice syrup or make your own at home for a personalized flavor.
  • Adjust the amount of champagne to suit your glass size and preferred strength of the drink.
  • The spiced sugar rim adds a decorative and flavorful touch but can be omitted if desired.
  • Chilling the champagne beforehand keeps the drink refreshing and helps maintain carbonation.
  • For a non-alcoholic version, substitute champagne with sparkling water or non-alcoholic sparkling wine.
