  • 1 Tbsp. butter
  • 1 large sweet onion, peeled and chopped
  • 2 cloves garlic, pressed
  • ½ pound boiling potatoes (about 3 medium), peeled and cut into small cubes
  • 2 medium carrots, cut into small pieces

  • 2 Tbsp. maple syrup
  • 4 pears, cored and cut into 1-inch chunks
  • 1 teaspoon fine sea salt
  • 2 tsp. chopped fresh thyme
  • 1 tsp. freshly ground nutmeg
  • 2 tsp. Grey Poupon Dijon mustard

  • 3 cups vegetable or chicken broth

Instructions

  1. Sauté Onions: In a large pot over medium heat, melt the butter. Add the chopped onion and reduce the heat to medium-low. Cover and cook the onions for about 10 minutes, stirring occasionally until they are soft and translucent.
  2. Add Vegetables: Increase heat to medium and stir in the pressed garlic, cubed potatoes, and chopped carrots. Cover the pot and cook for approximately 10 minutes to start softening the vegetables.
  3. Add Pears and Seasonings: Stir in the maple syrup, pear chunks, sea salt, fresh thyme, and ground nutmeg gently. Lower the heat and cook on low, stirring frequently for about 5 minutes to allow the flavors to meld.
  4. Simmer Soup: Pour in the broth and add the Dijon mustard. Bring the mixture to a boil over medium heat, then reduce to low. Cover and let the soup simmer for about 15 minutes or until the potatoes and carrots are tender.
  5. Puree the Soup: Carefully transfer the soup in batches to a blender or food processor. Puree until smooth, about 2-3 minutes per batch. Return the soup to the pot if necessary, and adjust seasoning with salt and pepper to taste.
