Ingredients

Spiced Pear Filling

  • 6 cups (893 grams) peeled and chopped pears (D’Anjou, Bartlett, or Bosc pears work well)
  • 1/2 cup, packed (106 grams) brown sugar
  • 2 1/2 tablespoons all-purpose flour
  • 1 tablespoon freshly-squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice

Crumble Topping

  • 1 1/2 cups (138 grams) old fashioned rolled oats
  • 1 cup (120 grams) all-purpose flour
  • 1/2 cup (47 grams) oat flour
  • 3/4 cup, packed (159 grams) brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 10 tablespoons (5 ounces) salted butter, melted

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC) and generously butter the bottom and sides of a 9-inch pie dish to prevent sticking and ensure easy serving.
  2. Prepare Spiced Pear Filling: In a medium bowl, toss the peeled and chopped pears with brown sugar, all-purpose flour, lemon juice, vanilla extract, cinnamon, nutmeg, and allspice. Mix well until all the pears are evenly coated with the spice mixture. Transfer this filling to the prepared baking dish, spreading it out evenly.
  3. Make the Crumble Topping: Using the same bowl, whisk together the rolled oats, all-purpose flour, oat flour, brown sugar, and ground cinnamon. Pour in the melted salted butter and mix until the dry ingredients are evenly coated and the mixture becomes damp and crumbly.
  4. Assemble the Crumble: Carefully spoon the crumble topping over the pear filling in the pie dish. Make sure the pears are completely covered with the topping, using all of the crumble mixture for a thick, crunchy layer.
  5. Bake the Crumble: Place the pie dish in the preheated oven and bake for about 50 minutes. Bake until the top is golden-brown and the pear filling is bubbling around the edges.
  6. Serve: Remove the crumble from the oven and let it cool slightly. Serve warm, ideally with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend and ensure oats are certified gluten-free.
  • Use ripe but firm pears to avoid mushy filling.
  • Leftover crumble can be refrigerated for up to 3 days and reheated gently in the oven.
  • Adding chopped nuts like walnuts or pecans to the topping can add extra texture.
  • Adjust sugar amount based on the sweetness of your pears.
