On half of the tortilla, create layers starting with 2 to 3 tablespoons of shredded cheese, then add 1/4 cup shredded Honey Chipotle Chicken, followed by another 2 to 3 tablespoons of shredded cheese, 1 tablespoon pickled red onions, and finally 1/2 to 1 teaspoon of Chipotle Aioli, leaving a 1-inch border around the edge.
  3. Fold Tortilla: Carefully fold the tortilla in half to form a half-moon shape, pressing gently to keep the filling inside.
  4. Cook Quesadilla: Place the folded quesadilla in the preheated skillet over medium-low heat. Cover with a lid to help melt the cheese and cook evenly. Cook for 1 to 2 minutes or until the bottom is golden brown. Flip the quesadilla and cover again, cooking the other side for 1 to 2 minutes until golden brown.
