This easy flourless oatmeal carrot cake recipe is a healthier and delicious alternative to traditional carrot cake. Made without refined sugar or flour, it is perfect for a guilt-free sweet treat. Whether enjoyed with a cup of tea or coffee or as a snack for kids, this cake is sure to be a hit.

Ingredients

Eggs:

  • 2 eggs

Honey:

  • 1/2 cup honey

Carrots:

  • 2 carrots, shredded

Oats:

  • 1 cup oats

Baking Soda:

  • 1/2 tsp baking soda

Cinnamon:

  • 1 tbsp cinnamon

Butter:

  • 1/4 cup butter, room temperature

Vanilla:

  • 1 tsp vanilla

Instructions

  1. Preheat the Oven: Preheat your oven to 180C/300F.
  2. Blend Ingredients: In a bowl, combine all ingredients (except shredded carrots) and blend using an immersion blender or a regular blender until smooth.
  3. Add Carrots: Stir in the shredded carrots.
  4. Bake: Line a small baking pan with parchment paper, spread the mixture, and bake at 180C/350F for 20-30 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool and Serve: Allow the cake to cool before slicing and enjoying!

Notes

  • This carrot cake is delicious on its own, or you can easily make a frosting by mixing cream cheese, honey, and vanilla to spread on top of the cooled cake.
