Ingredients

Rice:

  • 2 cups day old white rice preferably long grain

Eggs:

  • 2 large eggs, beaten

Veggies:

  • ½ small yellow onion, small dice
  • 2 tablespoons frozen peas and carrots, thawed (optional)

Sauces:

  • 1 tablespoon Shaoxing rice wine (optional)
  • 2 tablespoons light sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon toasted sesame oil (optional)

Garnish:

  • 1 stalk green onion, just the green part sliced (optional for garnish)
  • Toasted sesame seeds (optional for garnish)
  • Oil as needed for cooking and garnish

Instructions

  1. Prepare Rice: Break apart day-old rice grains by rubbing them between your hands or in a sealed bag until separated.
  2. Cook Eggs: In a hot wok, scramble beaten eggs until cooked, then set aside.
  3. Sauté Veggies: Stir-fry onion, peas, and carrots until fragrant.
  4. Combine Ingredients: Add rice, scrambled eggs, sauces, and wine. Stir-fry until well combined.
