Ingredients

Sriracha Roasted Veggies

  • 8 ounces cremini mushrooms, quartered
  • 1/2 red pepper, sliced
  • 1 tablespoon sesame oil
  • 1 to 2 teaspoons sriracha hot sauce

For the sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons hot water

For the lo mein:

  • 8 ounces lo mein noodles, fresh or dried
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 pound boneless chicken breast, sliced thin
  • 1/2 head green cabbage, shredded (about 3 cups)
  • 1 large carrot, grated

For the garnish:

  • Fresh scallions, chopped
  • Sesame seeds

Instructions

  1. Sriracha Roasted Veggies: Preheat the oven to 400°F. Toss mushrooms and red peppers with sesame oil and sriracha. Roast for 15 minutes.
  2. Make the sauce: Combine soy sauce, hoisin sauce, sesame oil, and hot water in a bowl.
  3. Cook the noodles: Boil salted water, cook noodles until tender, drain, and toss with sesame oil.
  4. Cook the chicken: Sauté chicken in a wok until barely cooked through.
  5. Add the vegetables: Stir in cabbage and carrots until wilted.
  6. Add noodles and sauce: Combine noodles, sauce, chicken, and veggies. Adjust seasoning.
  7. Serve: Top with scallions, sesame seeds, and roasted veggies.
