This easy banana bread recipe is a simple and delicious way to use up ripe bananas. Moist and flavorful, it’s a perfect treat for breakfast or snacking.

Ingredients

Banana Bread:

  • 3 medium ripe bananas, mashed (about 1 cup)
  • ½ cup mayonnaise or dressing
  • 1 egg, room temperature
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Grease an 8×4-inch loaf pan and set aside.
  2. Mix wet ingredients: Mash bananas and combine with mayonnaise and egg in a bowl.
  3. Combine dry ingredients: In a separate bowl, mix flour, sugar, baking soda, salt, and pecans.
  4. Combine wet and dry: Gently fold wet mixture into dry ingredients until just combined.
  5. Bake: Pour batter into pan and bake for 60-70 minutes, or until a toothpick comes out clean.
  6. Cool and slice: Cool in the pan on a wire rack before slicing.

Notes

  • To ripen bananas quickly, bake at 300°F for 15-20 minutes.
  • Avoid adding extra bananas to prevent a dense bread. Use about 1 cup of mashed bananas.

  • For muffins, divide batter into 12 wells and bake for 14-18 minutes.
