Ingredients

Filling

Taquitos

  • 12 small corn tortillas
  • 2 tablespoons oil for brushing

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
  2. Prepare the filling: In a large bowl, combine the shredded rotisserie chicken, softened cream cheese, shredded cheddar cheese, salsa verde, garlic powder, and salt. Mix everything together thoroughly until well combined into a creamy filling.
  3. Warm the tortillas: To make the tortillas pliable and easy to roll, warm them in the microwave wrapped in a damp paper towel for about 20-30 seconds, or heat each tortilla briefly in a skillet.
  4. Fill and roll taquitos: Spoon 2 to 3 tablespoons of the chicken mixture near the edge of each warmed tortilla. Roll the tortilla tightly around the filling to form a taquito.
