Ingredients

2 medium cucumbers

2 tablespoons rice vinegar

1 tablespoon soy sauce

1 tablespoon honey or sugar

1 teaspoon sesame oil

1/2 teaspoon chili flakes (optional)

1 tablespoon sesame seeds

2 tablespoons chopped fresh cilantro (optional)

1 clove garlic, minced (optional)

Instructions

  1. Wash and slice the cucumbers into thin rounds or half-moons, depending on your preference.
  2. In a small bowl, whisk together the rice vinegar, soy sauce, honey (or sugar), sesame oil, and chili flakes (if using).
  3. Place the sliced cucumbers into a large mixing bowl.
