Ingredients

Main Ingredients

  • 1 cup sifted all-purpose flour
  • ½ cup sugar
  • ¾ tablespoon baking powder (make sure it’s not expired)
  • 3 large eggs (at room temperature)
  • ½ cup avocado oil (or any neutral cooking oil)
  • 3 medium apples (peeled and diced small, approx. 2 to cups; honeycrisp recommended)

Glaze

  • ½ cup milk
  • 2 tablespoons butter
  • 2 tablespoons sugar

For Serving

  • Powdered sugar (for dusting)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Spray a 7-inch springform pan with baking spray and line it with parchment paper. Using a larger pan is possible but will yield a thinner cake that requires closer monitoring during baking.
  2. Combine Dry Ingredients and Mix Batter: In a mixing bowl, combine sifted flour, sugar, and baking powder. Add the eggs and avocado oil, stirring until the batter is smooth and thick. Gently fold in the peeled, diced apples until they are evenly coated with the batter.
  3. Bake the Cake: Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  4. Prepare the Buttery Milk Glaze: Around 5 minutes before the cake finishes baking, warm the milk, butter, and sugar together in a small pot over medium heat. Whisk continuously until the mixture is hot and both butter and sugar have fully melted, then remove from heat.
  5. Poke Holes in the Cake: Once the cake is baked, remove it from the oven. Using a long skewer or chopstick, gently poke 25 to 30 evenly spaced holes from the top through to the bottom of the cake to allow the glaze to soak in.
  6. Pour Glaze Over Cake: Slowly pour the warm milk mixture over the cake evenly, allowing it to seep deep into the holes and soak the cake thoroughly.
  7. Cool and Remove from Pan: Allow the cake to absorb the glaze as it cools. Then carefully remove the springform pan ring and peel away the parchment paper. Let the cake rest on a plate for 10 to 15 minutes to set and develop a custard-like interior texture.
  8. Optional Dusting and Serve: Once cooled, dust the cake with powdered sugar for a pretty finish. Slice and enjoy your moist, flavorful apple cake!

Notes

  • Using a 7-inch springform pan is ideal for thickness and baking time; larger pans will yield a thinner cake.
  • Ensure eggs are at room temperature for better batter incorporation.
  • The glaze is key to giving the cake its moist, custard-like texture — don’t skip it.
  • Honeycrisp apples are preferred for their sweetness and texture but you can use any medium apples.
  • Poking multiple holes in the cake allows better absorption of the warm glaze.
  • Serve slightly warm or at room temperature for best flavor.
  • Store leftovers in an airtight container for up to 3 days.
