Ingredients

Vegetables

  • 2 Carrots, sliced
  • 1/4 Yellow Onion, sliced

  • 1 bunch Green Onion (green part only)

Noodles

  • 8 oz Dry Egg Noodles (package or fresh)

Sauce

  • 2 tbsp Dark Soy Sauce
  • 2 tbsp Soy Sauce
  • 2 tbsp Brown Sugar (or regular sugar)
  • 1 tbsp Water
  • 1 tsp Sesame Oil
  • 1 tbsp Corn Starch
  • 1/4 tsp White Pepper
  • 1 tbsp Oyster Sauce

Instructions

  1. Prepare the vegetables. Start by slicing the yellow onion, carrots, cabbage, garlic, and the green parts of the green onion, then set them aside for later use to streamline your cooking process.
  2. Make the sauce. In a bowl, combine the dark soy sauce, soy sauce, brown sugar, corn starch, water, oyster sauce, sesame oil, and white pepper. Mix thoroughly until the sugar and corn starch are fully dissolved and the sauce is well combined.
  3. Cook the noodles. Bring a large pot of water to a rolling boil, add the dry egg noodles, and cook for about 5 minutes or until just tender. Then drain and rinse the noodles under cold water to halt the cooking process and prevent them from sticking together.
  4. Stir-fry the vegetables and noodles. Heat a pan or wok over medium-high heat. Add the diced garlic, sliced carrots, and sliced onion, cooking for 2 minutes to soften slightly.
