Quick to prepare and packed with savory Asian flavors, it’s a perfect weeknight dinner that brings together crisp carrots, cabbage, and aromatic garlic in a delicious stir-fry.

Ingredients

Vegetables

  • 2 Carrots, sliced
  • 1/4 Yellow Onion, sliced
  • 3 cups Cabbage, thinly sliced (about 1/4 large cabbage)
  • 3 Garlic Cloves, diced
  • 1 bunch Green Onion (green part only)

Noodles

  • 8 oz Dry Egg Noodles (package or fresh)

Sauce

  • 2 tbsp Dark Soy Sauce
  • 2 tbsp Soy Sauce
  • 2 tbsp Brown Sugar (or regular sugar)
  • 1 tbsp Water
  • 1 tsp Sesame Oil
  • 1 tbsp Corn Starch
  • 1/4 tsp White Pepper
  • 1 tbsp Oyster Sauce

Instructions

  1. Prepare Vegetables: Start by slicing your onion, carrots, cabbage, garlic, and green onion. Set them aside for later use to have all your ingredients prepped before cooking.
  2. Make the Sauce: In a bowl, combine dark soy sauce, regular soy sauce, brown sugar, corn starch, water, oyster sauce, sesame oil, and white pepper. Mix thoroughly until the sauce ingredients are fully combined and the corn starch is dissolved.
  3. Cook Noodles: Bring a pot of water to a boil and cook the 8 oz egg noodles for about 5 minutes until tender. Once cooked, drain and rinse the noodles under cold water to stop them from cooking further and to prevent sticking.
  4. Stir-fry Vegetables: Heat a hot pan or wok. Add garlic, sliced carrots, and sliced onion and cook for 2 minutes to soften. Then add the sliced cabbage and continue stir-frying for an additional 2 minutes until the cabbage wilts slightly.
  5. Add Noodles and Sauce: Toss the cooked noodles, prepared sauce, and chopped green onions into the pan with the vegetables. Stir everything together and cook for another minute, ensuring the noodles become fully coated with the sauce and heated through.
  6. Serve: Transfer the Lo Mein to plates and serve immediately while warm. Enjoy your quick and flavorful homemade Lo Mein!

Notes

  • Use fresh egg noodles if available for the best texture.
  • For a vegetarian version, substitute oyster sauce with mushroom stir-fry sauce.
  • Feel free to add protein such as cooked chicken, shrimp, or tofu for a complete meal.
  • Adjust the amount of soy sauce to taste for saltiness preference.
  • Rinsing noodles after boiling prevents them from overcooking and sticking together.
  • Cook vegetables quickly over high heat to retain their crispness.
