Ingredients

For the Dough

  • 1 cup Shredded Mozzarella
  • 1 cup Pepperoni, Sliced
  • 1 cup Tomato Sauce

Instructions

  1. Make the dough: In a large bowl, combine the flour, Greek yogurt, baking powder, and kosher salt. Mix thoroughly with a wooden spoon until it forms a rough dough, then transfer to a lightly floured surface and knead until smooth and elastic.
  2. Divide the dough: Cut the dough into 8 equal-sized balls to create individual pizza pockets.
  3. Assemble the pockets: Flatten each dough ball into a disc. Spoon 1 tablespoon of tomato sauce onto the center of each, add 1 tablespoon of shredded mozzarella, and topped with several slices of pepperoni.
  4. Seal the pockets: Carefully fold the edges of the dough over the filling, pinching to seal completely so no filling escapes. Flatten the sealed dough ball gently to form a burger or hockey puck shape.
  5. Cook the pockets: Heat a pan over medium-low heat. Place the pizza pockets in the pan and cook each side for 7 to 10 minutes. Ensure the heat remains low enough to prevent burning while allowing the dough to cook through and become golden brown. Flip carefully to cook the other side evenly.
