Ingredients

Dill Pickle Ranch Dressing

  • 3/4 cup sour cream
  • 1/2 cup buttermilk
  • 1 tablespoon dill pickle seasoning, such as Savory Spice® Big Dill Pickle Seasoning
  • Zest plus 1 teaspoon lime juice from 1 lime

Chicken

  • 4 skinless, boneless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon dill pickle seasoning, such as Savory Spice® Big Dill Pickle Seasoning
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup panko breadcrumbs
  • 1 cup finely grated Parmesan cheese
  • 2 tablespoons dry ranch seasoning

Instructions

  1. Prepare the Dill Pickle Ranch Dressing: In a small bowl, stir together the sour cream, buttermilk, dill pickle seasoning, lime zest, and lime juice. Refrigerate the dressing for at least 15 minutes to allow the flavors to meld.
  2. Preheat and Prepare Baking Sheet: Preheat your oven to 375°F (190°C), preferably using the convection setting for crispier results. Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  3. Cut and Season the Chicken: On a cutting board, slice each chicken breast in half horizontally, then cut each half in half vertically so each piece is roughly the size of a deck of cards. Season these chicken pieces evenly with salt, dill pickle seasoning, freshly ground black pepper, and garlic powder.
  4. Prepare Coating Stations: Measure out 3/4 cup of the prepared dill pickle ranch dressing into a shallow bowl. In another shallow bowl, combine the panko breadcrumbs, finely grated Parmesan cheese, and dry ranch seasoning mix.
  5. Coat the Chicken Pieces: Dip each seasoned chicken piece into the dill pickle ranch dressing, allowing any excess dressing to drip off. Then coat each piece thoroughly in the panko-Parmesan-ranch breadcrumb mixture.
  6. Bake the Chicken: Arrange the coated chicken pieces on the prepared baking sheet, ensuring they are spaced apart. Place the baking sheet in the preheated oven and bake for 15 to 20 minutes, until the chicken is golden brown, no longer pink inside, and the juices run clear.
