Marinade:
3/4 cup water
1/2 cup rice wine vinegar
1/2 cup dry sherry
1/2 cup soy sauce
1 1/2 tablespoon sesame oil
3/4 cup brown sugar, packed
6 garlic cloves, minced
1 tablespoon ginger, minced
2 teaspoons garlic chili paste
1/4 teaspoon red pepper flakes
Chicken Coating:
1 cup all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Other:
1 pound boneless skinless chicken breast, diced
3 tablespoons vegetable oil
Instructions
Making the Sauce: In a bowl, mix together water, rice wine vinegar, sherry, soy sauce, sesame oil, brown sugar, garlic, ginger, garlic chili paste, and red pepper flakes. Whisk until well combined.
Marinating the Chicken: Pour 1 cup of the sauce over the diced chicken in a container. Refrigerate for 30 minutes to 24 hours.
Coating the Chicken: Combine flour, salt, and pepper in a bowl. Coat the marinated chicken in the flour mixture.
Cooking: Brown the coated chicken in vegetable oil. Add the reserved sauce and simmer until thickened.
