Ingredients

For the Bars:

  • 2 1/2 cups unsalted nuts of choice (3/4 cup cashews, 3/4 cup peanuts, 1 cup almonds)
  • 1/2 cup puffed rice
  • 1/4 cup brown rice syrup
  • 1 1/2 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

For the Chocolate Coating:

  • 1 cup dark chocolate chips
  • 2 teaspoons coconut oil
  • Optional: flaky salt for topping

Instructions

  1. Preheat oven: Preheat oven to 325˚F / 160˚C.
  2. Toast nuts: Spread nuts on a baking sheet and bake until fragrant.
  3. Prepare pan: Line an 8×8-inch pan with parchment paper.
  4. Mix ingredients: Combine nuts, puffed rice, syrup, vanilla, and salt.
  5. Press mixture: Press mixture into pan and bake.
  6. Cut into bars: Cool, cut into bars, and set aside.
  7. Coat in chocolate: Melt chocolate and oil, dip bars, and drizzle with chocolate.
  8. Chill: Refrigerate until set and enjoy!

  • If brown rice syrup is unavailable, honey can be used as a substitute.
  • Store in an airtight container at room temperature for up to a week or in the freezer for several months, separating layers with parchment paper.
