Ingredients

Crustless Cottage Cheese & Spinach Quiche:

  • 1 tbsp oil
  • 1 small onion, diced
  • 0.5 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1.5 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (I used half cheddar and half mozzarella)
  • 0.5 cup milk
  • 0.5 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Step 1: Preheat oven to 350 degrees. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and pepper and sauté until soft and translucent, about 3-4 minutes. Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, pepper, and garlic powder. Remove skillet from heat and set aside to cool.
  2. Step 2: In a large mixing bowl, whisk together the eggs, milk, and cottage cheese. Stir in Italian seasoning, salt, and pepper. Add shredded cheddar cheese to the egg mixture and stir. Add sautéed spinach and veggie mixture to the egg and cheese mixture. Stir gently to distribute the vegetables throughout the filling.
  3. Step 3: Grease a 9-inch pie dish with cooking spray and pour the quiche mixture into the prepared baking dish. Bake for 40-45 minutes until set in the center and lightly golden on top. Test doneness with a toothpick. Let the quiche cool for 5-10 minutes before slicing and serving warm.
