This creamy, cheesy Crock Pot Spinach Artichoke Dip is a warm and comforting appetizer perfect for gatherings. Combining fresh spinach, artichoke hearts, cream cheese, sour cream, and a blend of mozzarella and Parmesan cheeses, this dip simmers slowly in the crock pot for a deliciously melted, flavorful treat that’s easy to prepare and serve.

Ingredients

Spinach and Artichokes

  • 1 10-ounce bag fresh spinach, roughly chopped
  • 1 14-ounce can artichoke hearts, roughly chopped

Dairy and Cheese

  • 1 8-ounce block cream cheese, cut into cubes
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese

Seasonings

  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Combine Ingredients: Add roughly chopped fresh spinach, chopped artichoke hearts, cubed cream cheese, sour cream, shredded mozzarella, shredded Parmesan, and minced garlic into a small crock pot. Stir together all ingredients until well combined.
  2. Cook on Low: Place the lid on the crock pot and set the cooker to LOW. Let the dip cook for 2 hours total. After the first hour, carefully remove the lid and stir the mixture to ensure even cooking and prevent sticking.
  3. Continue Cooking: Replace the lid and let the dip cook for an additional hour on LOW, allowing the cheeses to melt thoroughly and flavors to meld.
  4. Season and Serve: After cooking, stir the dip well and taste. Adjust seasoning with salt and pepper as desired. Serve warm with crackers, chips, or sliced bread for dipping.

Notes

  • You can use frozen spinach as a substitute; just be sure to thaw and drain it well before adding.
  • For a spicier kick, add a pinch of cayenne pepper or crushed red pepper flakes.
  • Make sure to stir halfway through cooking to prevent the cheese from sticking or burning on the sides.
  • This dip can be kept warm on the crock pot’s warm setting if not serving immediately.
  • Try serving with pita chips, baguette slices, or fresh vegetable sticks for variety.
