Ingredients

Meat Mixture

  • 1 pound ground beef
  • 1 yellow onion, finely diced
  • 1 large (or 2 small) jalapeños, seeded and finely minced
  • ⅔ cup water
  • 2 tablespoons taco seasoning mix (homemade or store-bought)

Cheese and Tomatoes

  • 32 ounces Velveeta cheese, cut into cubes
  • 20 ounces canned Rotel (diced tomatoes and green chilies)

Instructions

  1. Cook the Beef and Onion: In a large skillet over medium heat, brown the ground beef and diced yellow onion until the beef is no longer pink. Drain the excess fat to keep the dip from getting greasy.
  2. Add Jalapeños and Seasoning: Add the finely minced jalapeños, water, and taco seasoning mix to the skillet. Increase the heat to medium-high and cook while stirring frequently until the liquid has evaporated, ensuring the flavors meld and the mixture thickens. Remove the skillet from heat once done.
  3. Combine in the Slow Cooker: Transfer the cooked beef mixture into a 4 to 6-quart slow cooker. Add the cubed Velveeta cheese and the canned Rotel. Stir well to combine all ingredients evenly.
  4. Slow Cook Until Melted: Set the slow cooker to low heat and cook for 1 to 2 hours, stirring occasionally until the cheese is completely melted and the dip is smooth and creamy.
