Ingredients

Meat

  • 1 pound lean ground beef

Vegetables

  • 1 medium sweet or yellow onion, chopped
  • 1/2 green bell pepper, seeded and chopped
  • 2 jalapeño peppers, seeded and finely chopped

  • 24 ounces processed American cheese loaf (Velveeta), cut into cubes
  • 1 (8-ounce) package cream cheese, cut into cubes

Canned Goods

  • 1 (15-ounce) can chili (with or without beans)

Condiments & Spices

  • 1 cup medium salsa
  • 1 teaspoon hot sauce (such as Chipotle TABASCO)

Instructions

  1. Brown the beef: In a large skillet over medium heat, brown the lean ground beef, breaking it into small pieces as it cooks. Once fully cooked and no longer pink, drain off the excess fat carefully to reduce greasiness. Transfer the cooked beef to a lightly greased 6-quart crock pot.
  2. Add remaining ingredients: To the crock pot with beef, add chopped onion, green bell pepper, jalapeño peppers, Velveeta cheese cubes, cream cheese cubes, canned chili, salsa, and the hot sauce. Give everything a good stir to combine all ingredients evenly.
  3. Cook in crock pot: Cover the crock pot with the lid and set it to cook on LOW for 3 hours. Stir the dip halfway through the cooking time to ensure smooth melting and consistent blending of flavors.
  4. Serve warm: Once cooked, turn off the crock pot and give the queso dip a final stir. Serve hot with tortilla chips or your preferred dippers. Add extra hot sauce on the side if desired for an added kick.
