Ingredients

For the Chicken

  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • ⅓ cup shredded Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • Salt & pepper to taste
  • 4 chicken breast cutlets

For the Hot Honey Glaze

  • 1 tablespoon butter
  • 2 tablespoons hot honey

Instructions

  1. Preheat oven to 375°F. Lightly grease a baking sheet.
  2. In one bowl, whisk the eggs. In another bowl, mix panko, flour, Parmesan, garlic powder, chili powder, salt, and pepper.
  3. Dip each chicken cutlet into the egg wash, ensuring it’s fully coated.
  4. Dredge in the panko mixture, pressing to adhere evenly.
  5. Place the coated chicken on the prepared baking sheet.
  6. Lightly spray the tops with cooking spray (VERY important – this helps crisp them up!).
  7. Bake for 50 minutes, flipping halfway through for even crispiness.
  8. While the chicken cooks, in a small pan over low heat, melt butter and stir in hot honey.
  9. Brush or drizzle the hot honey glaze over the crispy chicken.
  10. Serve over a salad or rice, and enjoy!
