Ingredients

1 lb chicken tenders

2 tbsp olive oil

Juice of 1 lemon (about 2 tbsp)

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried thyme

1 tsp paprika

½ tsp salt

¼ tsp black pepper

2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Make the Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper.

  2. Marinate the Chicken: Add the chicken tenders to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours.

  3. Preheat Cooking Surface: Heat a grill pan, nonstick skillet, or cast iron skillet over medium-high heat. Add a little olive oil if using a skillet.

  4. Cook the Chicken: Remove the chicken from the marinade and cook in a single layer for 5-7 minutes per side, until golden brown and the internal temperature reaches 165°F (75°C).

  5. Rest and Garnish: Let the chicken rest for a few minutes before serving. Garnish with fresh parsley.
