1 lb chicken tenders
2 tbsp olive oil
Juice of 1 lemon (about 2 tbsp)
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1 tsp paprika
½ tsp salt
¼ tsp black pepper
2 tbsp fresh parsley, chopped (for garnish)
Make the Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper.
Marinate the Chicken: Add the chicken tenders to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Preheat Cooking Surface: Heat a grill pan, nonstick skillet, or cast iron skillet over medium-high heat. Add a little olive oil if using a skillet.
Cook the Chicken: Remove the chicken from the marinade and cook in a single layer for 5-7 minutes per side, until golden brown and the internal temperature reaches 165°F (75°C).
Rest and Garnish: Let the chicken rest for a few minutes before serving. Garnish with fresh parsley.
You can substitute chicken breasts for tenders by cutting them into strips.
For extra spice, add red pepper flakes or cayenne to the marinade.
