Ingredients

Filling

  • 1 lb. ground chicken
  • 2 tsp minced ginger
  • 2 tsp minced garlic
  • 2 1/2 cups shredded coleslaw mix (cabbage and carrots)
  • 3 green onions, sliced
  • 1/2 tsp salt
  • 2 tsp sugar
  • 1 tbsp sesame oil
  • 1/4 tsp Chinese five spice powder

Egg Rolls

  • 20 egg roll wrappers
  • 1 large egg, beaten (for sealing wrappers)
  • 1 quart vegetable oil (for frying)

Instructions

  1. Cook the Chicken: In a large wok or skillet over medium-high heat, cook the ground chicken along with minced ginger and garlic until the chicken is crumbly and no longer pink. Drain any excess fat from the skillet and return it to the heat.
  2. Add Vegetables and Seasoning: Stir in the shredded cabbage and carrot mix, sliced green onions, salt, sugar, sesame oil, and Chinese five spice powder. Cook the mixture, stirring occasionally, until the vegetables are tender. Remove from heat and let it cool slightly.
  3. Assemble the Egg Rolls: Place about 2 tablespoons of the chicken mixture on each egg roll wrapper. Brush the edges of the wrapper with the beaten egg to help seal. Roll the wrappers tightly around the filling, making sure the edges are securely sealed.
  4. Heat Oil and Fry: Preheat a fryer to 375°F, or heat about 2 inches of vegetable oil in a heavy-bottomed pot to 375°F. Fry the egg rolls in batches in the hot oil until they are golden brown and crispy, about 3-5 minutes per batch. Remove and drain on paper towels.
  5. Serve: Enjoy the crispy chicken egg rolls warm as an appetizer or snack.

Notes

  • For extra crispness, make sure the oil is at the proper temperature before frying.
  • You can substitute ground turkey or pork for chicken if desired.
  • Serve with your favorite dipping sauce such as sweet chili, soy sauce, or mustard sauce.
  • If you prefer a less oily option, try baking the egg rolls at 400°F for 20-25 minutes, flipping halfway through.
  • Keep egg roll wrappers covered with a damp towel while assembling to prevent them from drying out.
