Sweet Potato Fries

Instructions

  1. Prepare: Wash and dry the sweet potatoes. Using a sharp knife, slice them into even ¼-inch strips. Place the cut potatoes into a large bowl of cold water and soak for at least 30 minutes or up to overnight to remove excess starch, which helps them crisp up.
  2. Preheat oven: Set your oven to 425°F (220°C) and position the rack in the middle. Line a large baking sheet with parchment paper and set it aside for later.
  3. Dry: Drain the soaked potatoes and thoroughly pat them dry with paper towels or a clean absorbent cloth to remove all moisture.
  4. Toss with seasonings: Place the dried potatoes into a large sealable bag. Drizzle olive oil over them and toss to coat evenly. Add cornstarch, onion powder, garlic powder, smoked paprika, salt, and pepper. Seal the bag and shake or toss until the fries are evenly coated with the seasoning mixture.
  5. Arrange for baking: Spread the coated fries in a single layer on the prepared baking sheet, making sure to leave some space between them to promote even cooking.
  6. Bake and flip: Bake the fries for 15 minutes. Then, carefully remove the baking sheet from the oven (keep the oven door closed) and use tongs or a spatula to flip each fry. Return to the oven and bake for another 7-10 minutes until the fries are browned at the tips and crispy.
  7. Cool and serve: Allow the fries to cool at room temperature for 2 minutes to help them crisp up further. Optionally garnish with freshly chopped parsley or chives. Serve warm for the best texture and flavor.
