Ingredients

Vegetables and Aromatics

  • 1 tablespoon extra virgin olive oil
  • 2 celery stalks, chopped
  • 6 garlic cloves, finely chopped
  • 1 leek, white portion sliced or chopped
  • 1 red pepper, chopped

Seasonings and Liquids

  • 3 teaspoons blackening or Creole seasoning (plus additional to taste)
  • 2 bay leaves
  • 13.5 ounces full fat coconut milk
  • 1/4 cup dry white wine
  • 1/2 cup clam juice
  • 2 tablespoons tomato paste
  • Salt and pepper to taste

Seafood

  • 12 ounces Red Snapper or Cod fillets, chopped into large chunks
  • 12 ounces jumbo shrimp (21/25 count), peeled, cleaned, and dried

  • Cilantro

Instructions

  1. Heat the Pan: Heat a large saucepan over medium-high heat. Once hot, add the olive oil.
  2. Sauté Vegetables: Add the leeks, garlic, red peppers, and celery to the pan. Cook for about 4-5 minutes, stirring frequently, until the vegetables are softened.
  3. Add Seasonings: Stir in the blackening or Creole seasoning, tomato paste, and bay leaves until well combined with the vegetables.
  4. Deglaze and Simmer: Pour in the white wine and clam juice, stirring to combine. Cook the mixture over medium heat for about 2 minutes to blend the flavors.
  5. Cook Seafood: Gently add the fish and shrimp to the saucepan. Stir carefully to combine without breaking the fish pieces. Continue cooking over medium heat for about 5 minutes, or until the seafood is cooked through.
  6. Finish with Coconut Milk: Turn off the heat and stir in the full-fat coconut milk until fully incorporated.
  7. Season and Garnish: Add additional Creole or blackening seasoning if desired, and season with salt and pepper to taste. Remove the bay leaves and garnish with optional cilantro. Serve immediately.
