Penne Pasta:
300g penne pasta, cooked al dente
Veggies:
1 green bell pepper, diced
1 red onion, diced
Pesto Sauce:
6 tbsp pesto sauce
Creamy Base:
1/2 cup reserved pasta water
2 cups heavy cream (35%)
1 1/2 tbsp all-purpose flour
1 tbsp garlic powder
1 tbsp dried oregano
Freshly chopped parsley, a handful
1 tsp black pepper
Optional Toppings:
Grated Parmesan
Instructions
Sauté the Vegetables: Heat a large pan over medium heat. Add diced bell pepper and red onion with 1 tsp salt. Sauté for about 10 minutes until softened.
Prepare the Pesto Sauce: Add pesto sauce and reserved pasta water to the vegetables. Simmer for 5 minutes.
Create the Creamy Base: Whisk flour with warm water to make a slurry. Gradually stir into the pan with heavy cream. Simmer until thickened.
Season the Sauce: Add garlic powder, oregano, parsley, and black pepper. Adjust seasoning.
Combine Pasta and Sauce: Toss cooked pasta into the sauce. Simmer for 5 minutes to meld flavors.
Serve: Plate pasta, top with Parmesan if desired, and garnish with parsley.

Take your time sautéing the vegetables for maximum flavor.
Adjust the consistency of the sauce by adding more pasta water if needed.
