Ingredients

Orzo and Broth

  • 2 cups (300 g) orzo
  • 2 1/2 cups (600 ml) vegetable broth

Sauté Base

  • 2 tablespoons olive oil
  • 1 tablespoon (20 g) butter
  • 1 large shallot, finely chopped
  • 4 garlic cloves, finely chopped
  • 1/4 teaspoon red chili flakes (optional)

Finishing Ingredients

  • 1 cup (200 ml) half and half (single cream)
  • 1/2 cup (50 g) freshly grated Parmesan
  • Salt and freshly ground black pepper to taste
  • A handful fresh parsley, to garnish

Instructions

  1. Heat fat: In a large skillet or pan, heat the olive oil and butter over medium heat until the butter is melted, creating a flavorful base for sautéing.
  2. Sauté aromatics: Add the finely chopped shallot and garlic to the pan and sauté for 2-3 minutes until the shallot becomes translucent and the garlic is fragrant, building the dish’s aromatic foundation.
  3. Add spices and orzo: Stir in the red chili flakes if using, then add the orzo pasta to the pan, tossing it to coat with the olive oil and butter mixture evenly.
  4. Add broth and cook: Pour in the vegetable broth and stir to combine. Bring the mixture to a boil, then reduce heat to low to simmer gently.
  5. Simmer orzo: Allow the orzo to simmer for 10-15 minutes, stirring occasionally, until it is tender and has absorbed most of the broth, ensuring a creamy texture.
  6. Add cream: Pour the half and half into the pan, stirring to mix well. Heat over low heat until the mixture is hot but not boiling, maintaining creaminess without curdling.
  7. Add cheese and season: Stir in the freshly grated Parmesan cheese until melted and combined. Season with salt and freshly ground black pepper to taste, enhancing flavor depth.
