A refreshing, savory dish combining crisp cucumbers, rich cheddar cheese, and hearty beef in a creamy dressing, perfect for a quick snack or light meal.

Ingredients

1 cucumber, sliced

1 cup cheddar cheese, shredded

1/2 cup cooked ground beef

1/4 cup sour cream

2 tbsp mayonnaise

1 tbsp Dijon mustard

1 tsp garlic powder

Salt and pepper to taste

Fresh herbs (optional, for garnish)

Instructions

  1. In a large bowl, combine the cucumber slices, shredded cheddar cheese, and cooked ground beef.
  2. In a small bowl, mix together the sour cream, mayonnaise, Dijon mustard, garlic powder, salt, and pepper until smooth.
  3. Pour the creamy dressing over the cucumber, cheddar, and beef mixture. Toss everything gently until well coated.
  4. Garnish with fresh herbs, if desired.
  5. Serve immediately, or chill in the refrigerator for 15 minutes to let the flavors meld.

Notes

  • Store leftovers in an airtight container in the fridge for up to 2 days. The cucumbers may lose some crispness after storage.
  • If using frozen beef, ensure it’s fully thawed and reheated before adding to the bowl.
  • Experiment with different cheeses like mozzarella, gouda, or feta for varied flavors.
  • For a spicier version, add cayenne pepper or red pepper flakes to the dressing or bowl.
