Ground Beef Mixture:
2 lbs lean ground beef
1 large yellow onion, diced
1 tablespoon olive oil
1 tablespoon minced garlic
½ cup all-purpose flour
Soup Base:
4 cups chicken broth
2 cups heavy cream
1½ teaspoons salt
1½ teaspoons black pepper
1 tablespoon onion powder
1 tablespoon Italian seasoning
½ teaspoon paprika
Additions:
1 cup matchstick carrots
1½ cups uncooked macaroni noodles
3 cups shredded cheddar cheese
⅓ cup shredded parmesan cheese
Instructions
Brown the Beef: In a large Dutch oven or soup pot, heat olive oil over medium-high heat. Add ground beef and diced onion. Cook until the beef is browned and crumbly and the onion is softened.
Add Garlic & Flour: Stir in garlic and cook for 1 minute. Sprinkle in flour, stirring well to coat the beef, and cook for 2–3 minutes to remove the raw flour taste.
Build the Base: Gradually whisk in chicken broth until smooth and slightly thickened. Pour in heavy cream and stir to combine.
Season the Soup: Add salt, pepper, onion powder, Italian seasoning, and paprika. Stir well.
Add Pasta & Carrots: Bring the mixture to a boil. Add matchstick carrots and macaroni noodles, stirring to combine.
Simmer: Cover with a lid, reduce heat to low, and simmer for 20 minutes, stirring occasionally so the pasta doesn’t stick.
Melt the Cheese: Remove the lid and stir in shredded cheddar and parmesan cheese until completely melted and the soup is creamy.
