Creamy Cheeseburger Macaroni Soup is a comforting and hearty soup that combines the flavors of a cheeseburger with the coziness of a bowl of soup. This easy-to-make recipe is perfect for a cozy night in or a family dinner.

Ingredients

Ground Beef Mixture:

  • 2 lbs lean ground beef
  • 1 large yellow onion, diced
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • ½ cup all-purpose flour

Soup Base:

  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1½ teaspoons salt
  • 1½ teaspoons black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasoning
  • ½ teaspoon paprika

Additions:

  • 1 cup matchstick carrots
  • 1½ cups uncooked macaroni noodles
  • 3 cups shredded cheddar cheese
  • ⅓ cup shredded parmesan cheese

Instructions

  1. Brown the Beef: In a large Dutch oven or soup pot, heat olive oil over medium-high heat. Add ground beef and diced onion. Cook until the beef is browned and crumbly and the onion is softened.
  2. Add Garlic & Flour: Stir in garlic and cook for 1 minute. Sprinkle in flour, stirring well to coat the beef, and cook for 2–3 minutes to remove the raw flour taste.
  3. Build the Base: Gradually whisk in chicken broth until smooth and slightly thickened. Pour in heavy cream and stir to combine.
  4. Season the Soup: Add salt, pepper, onion powder, Italian seasoning, and paprika. Stir well.
  5. Add Pasta & Carrots: Bring the mixture to a boil. Add matchstick carrots and macaroni noodles, stirring to combine.
  6. Simmer: Cover with a lid, reduce heat to low, and simmer for 20 minutes, stirring occasionally so the pasta doesn’t stick.
  7. Melt the Cheese: Remove the lid and stir in shredded cheddar and parmesan cheese until completely melted and the soup is creamy.
  8. Serve: Ladle into bowls and enjoy warm.
