Ingredients

For Cajun Shrimp:

  • 1 lb. large shrimp, peeled, deveined, tails removed, patted dry
  • 2 tsp. Cajun seasoning
  • 2 Tbsp. extra-virgin olive oil
  • Kosher salt

For Pasta:

  • 6 Tbsp. extra-virgin olive oil, divided
  • 1 small yellow onion, coarsely chopped
  • 1 red bell pepper, seeds and ribs removed, coarsely chopped
  • 4 garlic cloves
  • 12 oz. linguine
  • 1 cup heavy cream
  • 3 oz. Parmesan, finely grated
  • 1/2 cup finely chopped fresh parsley
  • 1/2 cup thinly sliced chives

Instructions

  1. Cajun Shrimp: In a bowl, toss shrimp with Cajun seasoning and olive oil. Season with salt. Set aside.
  2. Pasta: In a large skillet, heat olive oil. Add onion, bell pepper, and garlic. Cook until softened. Cook linguine per package instructions. Reserve 1 cup pasta water.
  3. Add cream and Parmesan to skillet. Cook until thickened. Add linguine, shrimp, parsley, and chives. Toss, adding pasta water as needed. Serve with extra Parmesan.

Notes

  • You can adjust the level of Cajun seasoning to suit your spice preference.
  • For a lighter option, you can use half-and-half instead of heavy cream.
