Ingredients
For Cajun Shrimp:
1 lb. large shrimp, peeled, deveined, tails removed, patted dry
2 tsp. Cajun seasoning
2 Tbsp. extra-virgin olive oil
Kosher salt
For Pasta:
6 Tbsp. extra-virgin olive oil, divided
1 small yellow onion, coarsely chopped
1 red bell pepper, seeds and ribs removed, coarsely chopped
4 garlic cloves
12 oz. linguine
1 cup heavy cream
3 oz. Parmesan, finely grated
1/2 cup finely chopped fresh parsley
1/2 cup thinly sliced chives
Instructions
Cajun Shrimp: In a bowl, toss shrimp with Cajun seasoning and olive oil. Season with salt. Set aside.
Pasta: In a large skillet, heat olive oil. Add onion, bell pepper, and garlic. Cook until softened. Cook linguine per package instructions. Reserve 1 cup pasta water.
Add cream and Parmesan to skillet. Cook until thickened. Add linguine, shrimp, parsley, and chives. Toss, adding pasta water as needed. Serve with extra Parmesan.
Notes
You can adjust the level of Cajun seasoning to suit your spice preference.
For a lighter option, you can use half-and-half instead of heavy cream.
