This creamy and spicy Buffalo Chicken Dip is a perfect crowd-pleaser for game days, parties, or casual gatherings. Made with shredded chicken, cream cheese, buffalo sauce, ranch dressing, and cheddar cheese, it’s slow-cooked in a crock pot to meld the flavors beautifully and served warm with fresh veggies and tortilla chips for dipping.

  • 4 cups cooked chicken breast, shredded
  • 8 ounces cream cheese
  • 3/4 cup buffalo sauce
  • 1 cup ranch dressing
  • 1 1/2 cups cheddar cheese, shredded (divided)

  • Carrot sticks
  • Celery sticks
  • Tortilla chips

Instructions

  1. Combine Ingredients: In your Crock Pot, add the shredded cooked chicken, cream cheese, buffalo sauce, ranch dressing, and 1 cup of shredded cheddar cheese. Stir them thoroughly to combine all the ingredients well.
  2. Cook the Dip: Place the lid on the Crock Pot and set it to LOW heat for 3 to 4 hours or on HIGH heat for 1 to 2 hours. Stir the mixture every 30 minutes to ensure even cooking and prevent sticking.
  3. Check for Doneness: The dip is ready when all the cheese has melted completely and there are no visible chunks of cream cheese left, creating a smooth and creamy texture.
  4. Add and Melt Topping Cheese: Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top of the dip. Replace the lid and continue cooking the dip until this cheese layer has melted.
  5. Serve: Garnish with thinly sliced green onions. Serve the warm dip with tortilla chips, carrot sticks, celery sticks, or your choice of crackers or veggies for dipping.

Notes

  • For a spicier dip, increase the buffalo sauce quantity to 1 cup or add a pinch of cayenne pepper.
  • Use rotisserie chicken for a quick shortcut if you want to save time on cooking chicken breasts.
  • If you don’t have a crock pot, this dip can also be baked in a 350°F oven covered with foil for about 25-30 minutes, stirring halfway through.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated gently on the stovetop or microwave.
  • Feel free to swap ranch dressing for blue cheese dressing for a different flavor profile.
