  • 1 can chickpeas (about 400g), drained
  • 1 medium-sized avocado
  • 1 cup cilantro (about 25 grams), fresh
  • 1 clove garlic
  • Juice of 1 lime
  • 34 tablespoons oil (olive oil recommended)
  • Salt and pepper to taste

Instructions

  1. Prepare Chickpeas: Drain the water from 1 can of chickpeas. For a smoother texture, optionally remove the skins from the chickpeas; otherwise, leave them on for a chunkier hummus.
  2. Blend Ingredients: In a food processor, combine the chickpeas, avocado, cilantro, garlic, lime juice, and oil. Blend for several minutes until the mixture reaches a creamy, smooth consistency and all ingredients are fully incorporated.
  3. Season: Taste your avocado hummus, then add salt and pepper according to your preference. Blend briefly again if needed to mix seasoning evenly.
  4. Serve: Serve your avocado hummus with pita bread, fresh cucumbers, cherry tomatoes, olives, nuts, and marinated vegan mozzarella for a complete and tasty snack or appetizer.

  • Removing chickpea skins will result in a smoother hummus but is optional.
