This creamy and refreshing Cream Cheese Sandwich combines a smooth herb-infused cream cheese spread with crisp cucumber slices and multigrain bread for a simple yet delicious snack or light meal. Ready in just 10 minutes, it features fresh herbs, a hint of garlic, and a touch of lemon juice to brighten the flavor, making it perfect for tea time, picnics, or casual gatherings.

Ingredients

Cream Cheese Spread

  • ¾ cup (150 grams) soft cream cheese (Philadelphia recommended)
  • 1 ½ tablespoons extra virgin olive oil
  • 1 teaspoon lemon juice
  • ¼ teaspoon fresh garlic, finely grated
  • ¼ teaspoon fine salt, or to taste
  • ⅛ teaspoon black pepper, or to taste
  • 2 tablespoons fresh herbs, chopped (such as basil, dill, parsley)

Sandwich Assembly

  • 4 slices sandwich bread (multigrain preferred)
  • ¼ English cucumber, thinly sliced (optional)
  • Optional: English cress for extra garnish

Instructions

  1. Prepare the Cream Cheese Spread: In a mixing bowl, combine the soft cream cheese, extra virgin olive oil, lemon juice, finely grated garlic, chopped fresh herbs, salt, and black pepper. Mix vigorously with a fork or whisk until the mixture is smooth and evenly blended. Taste and adjust seasoning as needed, adding extra lemon juice if you prefer a tangier flavor.
  2. Spread the Filling: Lay the bread slices flat on a cutting board. Generously spread one side of each slice with the prepared cream cheese herb filling, ensuring even coverage for a flavorful bite every time.
  3. Add Cucumber Slices: Arrange the thinly sliced cucumber pieces overlapping slightly on half of the bread slices that have the spread. For added freshness and crunch, you may also layer English cress on top of the cucumbers if desired.
  4. Assemble the Sandwich: Place the remaining bread slices, spread side down, over the cucumber-covered slices. Press down gently to hold the sandwich together.
  5. Finish and Serve: If preferred, remove the crusts by cutting them off with a sharp knife. Then slice the sandwiches into small rectangles or triangles, ideal for serving at a party or as a refined snack. Serve immediately and enjoy the fresh, creamy flavors.

Notes

  • Use multigrain bread for a heartier texture and added nutrients.
  • Feel free to customize the fresh herbs to your preference or what you have on hand.
  • The cucumber adds a refreshing crunch but can be omitted if desired.
  • Adding English cress or other microgreens enhances both the flavor and presentation.
  • For a vegan alternative, substitute cream cheese with a plant-based version.
  • This sandwich is best enjoyed fresh to keep the bread from becoming soggy.
