Cowboy Casserole is a hearty ground beef casserole topped with golden tater tots, making it an easy weeknight dinner the whole family will love.

  • 1/2 pound ground beef (85/15 lean)
  • 1 cup corn kernels
  • 2/3 cup condensed cream of mushroom soup
  • 1 cup sharp cheddar cheese, shredded (divided)
  • 1/3 cup whole milk
  • 1/4 cup sour cream
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 cup cooked beef, crumbled
  • 32 ounces frozen tater tots

Instructions

  1. Preheat your oven to 375°F and prepare a 9×13-inch baking dish.
  2. Cook the ground beef in a large skillet over medium heat until browned and no longer pink.
  3. Add corn, cream of mushroom soup, half of the cheddar cheese, milk, sour cream, onion powder, black pepper, and crumbled beef to the skillet. Mix well.
  4. Spread the beef mixture in the baking dish. Top with remaining cheese and arrange tater tots in a single layer.
  5. Bake uncovered for 40-45 minutes until tater tots are crispy and golden brown.
  6. Remove from oven, sprinkle remaining cheese over tater tots, and bake for another 5 minutes until cheese melts.

Notes

  • Let the casserole rest for 5-10 minutes before serving for easier cutting.
  • You can use fresh or canned corn instead of frozen – drain canned corn well.
  • Pre-cook bacon or use pre-cooked beef bits to save time.
