Ingredients

For the Bread:

  • 1/3 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 2 apples, peeled and chopped (any variety)
  • 2 tablespoons granulated sugar (for apples)
  • 2/3 cup granulated sugar
  • ½ cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1½ teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1¾ teaspoons baking powder
  • ½ cup plus 1 to 3 tablespoons milk (or almond milk)
  • Pinch of salt
  • Nonstick cooking spray (for greasing loaf pan)

For the Glaze:

  • ½ cup powdered sugar
  • Milk (just enough for drizzling consistency)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with nonstick cooking spray.
  2. In a small bowl, mix 1/3 cup light brown sugar and 2 teaspoons cinnamon. Set aside.
  3. In another bowl, toss the chopped apples with 2 tablespoons granulated sugar. Set aside.
  4. In a large mixing bowl, cream together the softened butter and 2/3 cup granulated sugar until light and fluffy.
  5. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. In a separate bowl, whisk together the flour, baking powder, and a pinch of salt.
  7. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry mixture. Stir until just combined — do not overmix.
  8. Spread half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon-sugar mixture and half of the apples. Repeat with the remaining batter, cinnamon-sugar, and apples.
  9. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Prepare the glaze by whisking the powdered sugar with just enough milk to create a smooth, pourable consistency.
  12. Drizzle the glaze over the cooled bread. Slice and enjoy warm or at room temperature.
