Fudgy and delicious brownies made healthier with cottage cheese and whole wheat flour, combining rich chocolate flavor with a moist, dense texture.

Ingredients

1/2 cup semi-sweet chocolate chips or chopped chocolate, melted

1 cup cottage cheese

1 tsp vanilla extract

1 egg

1/4 cup melted butter or avocado oil

3/4 cup milk

1/2 cup sugar, coconut sugar, or sugar-free alternative

1/2 cup cocoa powder

3/4 cup whole wheat flour (white whole wheat preferred)

1/2 tsp baking soda

1/4 tsp salt

1/3 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, combine cottage cheese, melted chocolate, melted butter, vanilla extract, egg, milk, sugar, and cocoa powder. Process on high until fully blended.
  3. In a large bowl, whisk together whole wheat flour, baking soda, and salt.
  4. Pour the blended wet ingredients into the dry ingredients and mix until just combined. Gently fold in mini chocolate chips.
  5. Transfer the batter to a 9×9-inch baking dish lightly oiled or lined with parchment paper.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Check at 20 minutes to avoid overbaking.
  7. Allow to cool completely before slicing into 16 brownies.
