Corn dog muffins offer a convenient and delicious twist on the classic fairground treat. These bite-sized muffins combine the savory flavor of hot dogs with a moist, cheesy cornbread batter, making them perfect for parties or a fun family snack. Using cocktail wieners or standard hot dogs cut in half allows for easy portioning in muffin tins, delivering a delightful mix of textures and flavors in every bite.

Ingredients

Cornbread Mixture

  • 2 (8.5 ounce) packages cornbread mix
  • 2 tablespoons brown sugar
  • 2 large eggs
  • 1 ½ cups milk
  • 1 cup grated Cheddar cheese

Hot Dogs

  • 9 hot dogs, cut in half

Instructions

  1. Prepare Oven and Muffin Tins: Preheat your oven to 400 degrees F (200 degrees C) and lightly grease the muffin tins to prevent sticking.
  2. Mix Cornbread Ingredients: In a large bowl, stir together the cornbread mix and brown sugar until well combined.
  3. Whisk Eggs and Milk: In a separate small bowl, whisk the eggs and milk until the mixture is smooth and uniform.
  4. Combine All Ingredients: Fold the whisked eggs and milk along with the grated Cheddar cheese into the cornbread mixture, mixing until the batter is moistened and evenly blended.
  5. Fill Muffin Cups: Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full to allow room for rising.
  6. Add Hot Dog Halves: Place one half of a hot dog into the center of each muffin cup, pressing gently so it is partially submerged in the batter.
  7. Bake: Bake in the preheated oven for 14 to 18 minutes, or until the muffins turn golden brown and a toothpick inserted near the hot dog comes out clean.
  8. Cool and Serve: Allow the corn dog muffins to cool slightly before removing them from the tin. Serve warm for best flavor and texture.

Notes

  • You can substitute cocktail wieners instead of regular hot dogs for smaller bites.
  • Grated Cheddar can be replaced with other cheeses like Monterey Jack or Colby for a different flavor profile.
  • Ensure that muffin tins are greased well to easily remove muffins after baking.
  • These muffins reheat well in a microwave or toaster oven for quick snacks.
