Ingredients

For the Coffee Cookies:

  • 1 stick Unsalted Butter (113g)
  • ½ cup Granulated Sugar (100g)
  • ½ cup Light Brown Sugar (110g)
  • 1 Large Egg
  • 3 tablespoons Espresso Powder
  • 1 teaspoon Vanilla Extract
  • 1 ½ cups All-purpose Flour (187g)
  • ½ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt

Instructions

  1. Melt the Butter: Melt the butter in the microwave, then mix it with both sugars.
  2. Prepare Coffee Mixture: Dissolve the espresso powder in hot water to form a paste, then add it to the butter/sugar mixture.
  3. Add Egg and Vanilla: Incorporate the egg and vanilla into the mixture.
  4. Mix Dry Ingredients: Combine the flour, baking powder, baking soda, and salt into the dough.
  5. Chill the Dough: Refrigerate the dough for 30 minutes for easier handling.
  6. Preheat and Shape: Preheat the oven, shape walnut-sized dough balls, and place them on a baking sheet.
  7. Bake: Bake the cookies for 12 minutes at 350°F (180°C).
  8. Cool: Allow the cookies to rest on the tray before transferring to a wire rack.
