Coffee Cookie Crack Bars are a perfect blend of sweet, savory, and coffee flavor, with a chewy, crispy cookie base and rich layers of chocolate. Ideal for coffee lovers, these bars are a simple yet indulgent treat.

Ingredients

1 cup of crushed coffee cookies (such as biscotti or coffee-flavored cookies)

½ cup of butter, melted

1 cup of semisweet chocolate chips

¼ cup of brewed coffee (strong)

½ cup of sweetened condensed milk

1 teaspoon of vanilla extract

A pinch of sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, combine the crushed coffee cookies with the melted butter. Stir well until the mixture is evenly coated.
  3. Press the cookie mixture into the bottom of the prepared baking pan, creating an even layer.
  4. In a separate microwave-safe bowl, combine the chocolate chips, brewed coffee, and sweetened condensed milk. Heat the mixture in the microwave in 30-second intervals, stirring in between, until the chocolate chips are melted and smooth.
  5. Pour the chocolate mixture over the cookie crust, spreading it evenly with a spatula.
  6. Bake for 15-18 minutes, or until the edges are golden brown and the center is set. Let cool completely in the pan.
  7. Once cooled, cut the bars into squares or rectangles and enjoy!

Notes

  • Feel free to experiment with different cookies for the base, such as chocolate chip or graham crackers.
  • You can adjust the coffee strength by using more or less brewed coffee.
  • To make them more decadent, swap the semisweet chocolate for milk or dark chocolate chips.
  • These bars can be stored for up to a week in the refrigerator or frozen for up to 2-3 months.
  • To reheat, microwave the bars for 10-15 seconds to soften the chocolate.
