Coffee cake is a moist, buttery cake with a streusel ribbon in the center, a cinnamon crumb topping, and a sweet drizzle – the perfect treat for breakfast or dessert.

Ingredients

Cake Batter:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 Tablespoon melted butter
  • 1 egg (room temperature)
  • 1½ cups buttermilk (room temperature)

Streusel Filling:

  • 3 Tablespoons softened butter
  • 1 Tablespoon cinnamon
  • ½ cup all-purpose flour
  • ½ cup brown sugar

Crumb Topping:

  • ½ cup firmly packed light brown sugar
  • ½ cup all-purpose flour
  • ½ Tablespoon cinnamon
  • ¼ cup butter, cubed
  • ⅛ teaspoon salt

Drizzle Topping:

  • ½ cup powdered sugar
  • 2½ teaspoons milk

Instructions

  1. Preheat the Oven: Heat oven to 375 degrees F.
  2. Prepare Baking Dish: Grease a 9 by 9-inch baking dish with 2-inch sides.
  3. Mix Dry Ingredients: In a large bowl, combine all the dry ingredients.
  4. Mix Wet Ingredients: In a medium bowl, combine the butter, egg, and buttermilk.
  5. Combine Batter: Add wet ingredients to the dry ingredients and stir until combined.
  6. Layer Batter: Pour half of the cake batter into the prepared dish.
  7. Prepare Streusel Filling: Combine softened butter, cinnamon, flour, and brown sugar in a bowl.
  8. Add Streusel: Sprinkle the streusel over the cake batter.
  9. Add Remaining Batter: Spread the remaining cake batter over the streusel.
  10. Prepare Crumb Topping: Cut cold butter into small cubes and combine with remaining ingredients.
  11. Top with Crumb Topping: Sprinkle the crumb topping over the batter.
  12. Bake: Bake for 30 to 40 minutes or until a toothpick comes out clean.
  13. Cool: Cool for 15 minutes on a rack, then remove from the pan to cool completely.
  14. Make Drizzle Topping: Combine powdered sugar and milk to make a glaze.
  15. Add Drizzle: Drizzle the glaze over the cooled cake.
