These delightful Coconut Balls are a no-bake, naturally sweetened treat made with desiccated coconut, puffed rice, and coconut milk. Perfect for a healthy snack or dessert, they combine a chewy texture with a light crunch, rolled in extra coconut for added flavor and presentation. Easy to prepare in under 30 minutes, they require no cooking, just blending and chilling.

  • 2 cups desiccated coconut (180g) + optional additional for rolling
  • 1 cup puffed rice (90g)
  • 3 Tbsp coconut oil (50g)
  • 3 Tbsp honey
  • 3 Tbsp coconut milk (45 ml), plus extra if needed

Instructions

  1. Process Dry Ingredients: Place the desiccated coconut and puffed rice into a food processor and blitz until the mixture is very fine.
  2. Add Wet Ingredients: Add the honey, coconut oil, and coconut milk to the processed dry ingredients. Blitz again until the mixture is well combined and starts to come together. If the mixture seems dry, add an extra tablespoon of coconut milk.
  3. Chill Mixture: Transfer the mixture to the refrigerator and chill for approximately 15 minutes. This step firms up the mixture, making it easier to roll.
  4. Shape Balls: Using about 1 tablespoon of the mixture per ball, roll into 20 even-sized balls with your hands.
  5. Optional Rolling: Roll each ball in additional desiccated coconut for extra texture and decoration if desired.
  6. Final Chill: Place the rolled balls back into the refrigerator for 1 to 2 hours to set.
  7. Serve: Remove from fridge and serve chilled as a healthy snack or dessert.

Notes

  • You can substitute honey with maple syrup for a vegan version.
  • If the mixture is too sticky, add a little more puffed rice or desiccated coconut to balance texture.
