A classic chicken salad blending tender chicken, crisp celery, sweet grapes, and a creamy dressing, perfect for sandwiches, wraps, or a refreshing lunch.

Ingredients

3 cups cooked chicken, chopped

1 cup red grapes, halved

1/2 small red onion, diced

2 stalks celery, diced

1/2 cup mayonnaise (light or regular)

1 tablespoon lemon juice

1/2 teaspoon salt

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the cooked chicken, red grapes, red onion, and celery.
  2. In a small bowl, whisk together the mayonnaise, lemon juice, salt, garlic powder, onion powder, and black pepper. Taste and adjust seasoning as needed.
  3. Pour the dressing over the chicken mixture and stir until well combined.
  4. Serve immediately or refrigerate in an airtight container for 3 to 5 days.

Notes

  • Add chopped nuts like almonds or walnuts for extra crunch.
  • Mix in fresh dill or parsley for enhanced flavor.
  • Add a dash of curry powder for a unique twist.
  • Substitute mayonnaise with Greek yogurt for a lighter version.
  • Store in the refrigerator up to 3 to 5 days; serve cold, no reheating needed.
  • Use rotisserie chicken for convenience by removing skin and bones before chopping.
  • This recipe is naturally gluten-free but check bread or crackers if serving with them.
  • Freezing is not recommended due to mayonnaise separation.
  • Add Dijon mustard or cayenne pepper to the dressing for spiciness.
  • Can be made a day ahead to let flavors meld.
  • Pairs well with leafy greens, sandwiches, croissants, or crackers.
  • Alternative fruits like diced apples or dried cranberries can replace grapes.
