This delightful Circus Animal Cheesecake combines a colorful twist on the classic cheesecake with a crunchy circus animal cookie crust and festive sprinkles on top. Ingredients

Crust

  • 1 (9-ounce) bag circus animal cookies
  • 1/2 cup butter, melted
  • 1 tablespoon sugar

Cheesecake Filling

  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • Pink food coloring, a few drops

  • Rainbow sprinkles
  • Circus animal cookies, for garnish

Instructions

  1. Crush the cookies: Pour the circus animal cookies into a large zip-top bag and crush them using a rolling pin until finely crumbed. Alternatively, pulse them in a food processor until you get fine crumbs.
  2. Make the crust mixture: In a large bowl, combine the crushed cookies with melted butter and sugar. Stir the mixture well until the crumbs begin to stick together, indicating a well-blended crust mixture.
  3. Form the crust: Grease an 8-inch springform pan thoroughly. Press the crust mixture evenly into the bottom of the pan to form a firm base. Place the pan in the freezer and chill for at least 30 minutes to allow the crust to set properly.
  4. Prepare cheesecake filling: While the crust chills, in a mixing bowl, beat together the softened cream cheese, sour cream, sugar, vanilla extract, and a few drops of pink food coloring. Continue mixing until the filling is smooth, creamy, and well combined with an even pink hue.
  5. Assemble the cheesecake: Remove the crust from the freezer and spread the prepared cheesecake filling evenly over the hardened crust layer. Cover the pan and place it in the refrigerator for at least 4 hours, preferably overnight, to let the cheesecake set fully.
