This Cinnamon Roll Mug Cake is a quick, single-serving treat that combines the comforting flavors of cinnamon rolls in a convenient microwave cake. Ingredients

Cake Batter

  • 4 tbsp all purpose flour
  • 3 tsp granulated white sugar
  • 1/4 tsp baking powder

  • 1/16 tsp nutmeg
  • 3 tbsp fat free milk
  • 1/2 tbsp vegetable oil

Cinnamon Swirl

  • 1 1/2 tbsp brown sugar
  • 1/8 tsp cinnamon
  • 1/2 tbsp unsalted butter

Frosting

  • 1/2 tbsp unsalted butter
  • 1 tbsp cream cheese
  • 2 tbsp powdered sugar

Instructions

  1. Prepare the Cake Batter: In a microwave-safe 8 oz mug, combine the all purpose flour, granulated sugar, baking powder, cinnamon, nutmeg, fat free milk, and vegetable oil. Whisk with a small whisk until the batter is smooth and lump-free.
  2. Make the Cinnamon Swirl: In a separate small bowl, mix the brown sugar, cinnamon, and unsalted butter. Microwave for 20-30 seconds until the butter melts, covering with a paper towel to prevent splatter. Stir the mixture until it forms a thick, uniform syrup. Pour into a small container with a narrow pouring spout for precise swirling.
  3. Layer the Swirl and Batter: Quickly scoop half of the cake batter out and set aside. Pour a cinnamon swirl into the batter remaining in the mug. Use a fork or whisk to draw the swirl if needed. Pour the reserved batter back in, covering the swirl completely, and then drizzle another cinnamon swirl on top.
  4. Microwave the Cake: Cook the mug cake in the microwave for about 1 minute, or until the cake is fully cooked. The cinnamon swirl butter may separate and become gooey during cooking but will solidify as the cake cools.
  5. Prepare the Frosting: While the cake cooks, combine the unsalted butter, cream cheese, and powdered sugar in a medium bowl. Microwave for about 10 seconds covered with a paper towel. Whisk thoroughly with a larger whisk until the frosting is smooth and thickened. Transfer the frosting to a piping bag and pipe it onto the cooled cake.
