Chopped Cheese is a classic New York street sandwich featuring seasoned and chopped ground beef cooked with onions and melted American cheese, served warm on a hero baguette with mayonnaise, ketchup, fresh tomato slices, and crunchy iceberg lettuce. This quick and flavorful sandwich is perfect for a satisfying lunch or dinner in just 15 minutes.

Ingredients

Bread and Condiments

  • 2 pieces Hero baguette bread (warmed in the pan)
  • Mayonnaise (to taste)
  • Ketchup (to taste)

Filling

  • 1 teaspoon neutral oil (such as avocado or vegetable oil)
  • 1/4 yellow onion (finely diced)
  • 2 (4-ounce) beef cut of meat patties
  • 1 teaspoon Adobo seasoning (eyeballed)
  • 3 slices American cheese
  • 1 tomato (thinly sliced)
  • 1/4 wedge iceberg lettuce (thinly sliced)

Instructions

  1. Warm the Bread: Place a cast iron skillet over medium-high heat and cut the hero baguette in half. Place the cut side down on the warm pan to gently warm the bread without toasting it. Repeat for both pieces.
  2. Cook the Onion: Pour in the neutral oil and wait until hot. Add the finely diced yellow onion and a pinch of salt. Sauté until the onion softens slightly.
  3. Cook and Chop the Beef: Add the beef patties to the pan with the onion and sprinkle the Adobo seasoning over the meat. Using a spatula, chop the patties continuously to break the meat into small chunks, resembling ground beef. Cook thoroughly until no longer pink.
  4. Melt the Cheese: Once the beef is fully cooked, add the American cheese slices on top. Mix the cheese into the meat until it melts evenly, creating a gooey, flavorful filling.
  5. Assemble the Sandwich: Spread mayonnaise and ketchup onto the warmed hero bread rolls. Divide the cheesy beef mixture evenly between the two rolls.
  6. Add Fresh Toppings: Top each sandwich with thin slices of tomato and a handful of shredded iceberg lettuce for a fresh crunch.
  7. Serve: Slice each sandwich in half and serve immediately while warm and melty.

Notes

  • Warming the bread instead of toasting preserves its soft texture to complement the juicy filling.
  • Adobo seasoning can be adjusted to taste or substituted with a mix of garlic powder, onion powder, and paprika.
  • Use a cast iron skillet or any heavy pan for even heat retention and better chopping texture.
  • Feel free to swap American cheese for cheddar or another melting cheese if preferred.
  • This recipe makes 2 substantial sandwiches, perfect for a quick meal for two.
