Delicious and nutritious Chocolate Protein Pancakes that are perfect for a high-protein breakfast or snack. Made with oat flour, cacao powder, and chocolate protein powder, these fluffy pancakes are dairy-free, lightly sweetened with coconut sugar, and topped with melted dark chocolate and optional fresh fruit for an extra indulgence.

Ingredients

Pancake Batter

  • ¾ cup oat flour (or all-purpose flour)
  • 2 tsp baking powder
  • 2 tbsp cacao powder
  • 2 tbsp chocolate protein powder
  • 23 tbsp coconut sugar
  • 1 cup dairy-free milk
  • 2 tbsp coconut oil (plus more for greasing)
  • 1 dash vanilla extract
  • 1 pinch salt
  • ½ cup chocolate chips

Topping (Optional)

  • Dark chocolate (for melting)
  • Fresh fruit of choice (e.g., banana coins)

Instructions

  1. Prepare the batter: In a large bowl, combine oat flour, baking powder, cacao powder, chocolate protein powder, coconut sugar, and salt. Add dairy-free milk, coconut oil, and vanilla extract. Mix all the ingredients thoroughly until you have a smooth pancake batter. Fold in the chocolate chips gently.
  2. Heat the pan: Place a skillet or frying pan over medium heat and grease it lightly with coconut oil to prevent sticking.
  3. Cook the pancakes: Pour approximately 1/4 cup of batter into the pan to form each pancake. Cook for 2-4 minutes on one side until bubbles start to appear on the surface, then carefully flip and cook for another 2-4 minutes until golden brown and cooked through. Repeat with remaining batter to make about 5-6 pancakes.
  4. Melt the dark chocolate: Gently melt dark chocolate using a double boiler or microwave, stirring frequently to avoid burning.
  5. Serve: Drizzle the melted dark chocolate over the stack of pancakes. Add optional fresh fruit such as banana coins for extra flavor and texture. Serve warm and enjoy!
