Ingredients

Dry Ingredients:

  • 1 cup all-purpose flour
  • ¼ cup Dutch process cocoa
  • ¼ cup unsweetened cocoa powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon kosher salt

Additional Ingredients:

  • 2 teaspoons espresso powder or instant coffee
  • 2 tablespoons hot water
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • ⅔ cup sour cream, room temperature
  • 2 teaspoons vanilla extract

Chocolate Glaze:

  • ½ cup heavy cream
  • ½ cup bittersweet chocolate chips
  • 1 teaspoon butter
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F. Lightly grease a 8.5 x 4.5” loaf pan.
  2. In a medium bowl, combine dry ingredients and set aside.
  3. Dissolve espresso powder in hot water and set aside.
  4. Beat butter and sugar until light and fluffy.
  5. Add eggs one at a time, then mix in sour cream, vanilla, and coffee.
  6. Gradually add dry ingredients and mix until just combined.
  7. Bake the cake, cool, and prepare the chocolate glaze.
