  2. Assemble Sandwiches: Line a baking sheet or platter with parchment paper. Place about 1/2 teaspoon of natural peanut butter on one banana slice, then top with another slice to create a small banana peanut butter sandwich. Repeat until all slices are paired, creating approximately 30 banana bites. Arrange them on parchment-lined platters and freeze for about 1 hour until firm.
  3. Melt Chocolate: Combine dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave for 1 minute, stir, then continue microwaving in 30-second intervals, stirring after each, until fully melted, taking care not to burn the chocolate.
