Ingredients

Chocolate Mousse

  • 400 g whipping cream (divided into 200 g + 200 g)

Instructions

  1. Prepare the chocolate mixture: In a small bowl, combine the finely chopped chocolate, espresso powder, and vanilla extract. This forms the base flavor of your mousse.
  2. Heat cream: Warm 200 g of the whipping cream in a saucepan over medium heat or in the microwave just until it reaches a simmer. Pour the hot cream over the chocolate mixture and let it sit undisturbed for 2 minutes to melt the chocolate fully. Stir gently until smooth, then set aside to cool slightly.
  3. Whip the remaining cream: In a medium mixing bowl, whisk the remaining 200 g of whipping cream until soft peaks form, which means the cream holds a peak but still bends over slightly.
  4. Fold chocolate mixture into whipped cream: Carefully add the melted chocolate mixture to the whipped cream. Using a spatula, gently fold the mixtures together until evenly combined without streaks, preserving the light and airy texture.
  5. Fill the serving glasses: Spoon or pour the mousse into your choice of serving glasses or containers. For a clean finish, overfill coupe glasses and scrape off the excess mousse with a bench scraper to achieve a flat surface.
  6. Chill: Place the mousse cups in the refrigerator and chill for at least 4 hours or overnight. This allows the mousse to set properly and develop its rich texture.
  7. Prepare the topping whipped cream: In a small mixing bowl, combine the cold whipping cream, powdered sugar, and vanilla extract. Whisk until firm peaks form, indicating the cream is stiff enough to hold its shape on the mousse.
  8. Garnish the mousse cups: Add a generous dollop of the whipped cream on top of each chilled mousse cup. Place half a fresh strawberry on the whipped cream and use a microplane to grate chocolate shavings over each cup for an elegant finish.
